This cocktail was first served in creator Gaspare Campari's bar, Caffè Campari, in the 1860s. It was originally known as the "Milano-Torino" because of its ingredients: Campari, the bitter liqueur, is from Milan and Cinzano, the vermouth, is from Turin (Torino). Together with a small amount of soda water, this cocktail is an aperitif classic and a great choice in order to combat Melbourne's summer heat.

First called blanc-cassis, France's classic pre-meal aperitif was first made by mixing the lesser white wines of Burgundy, the likes of Chablis or Bourgogne Aligote, with Creme de Cassis from the area, however, the drink is now named after Félix Kir (1876–1968), mayor of Dijon in Burgundy, who as a pioneer of the twinning movement in the aftermath of the Second World War popularized the drink by offering it at receptions to visiting delegations. The Royale Kir is simply made with sparkling wine instead of still and it is this that we offer to revitalise your tastebuds.

There are many factors which attribute to Champagne's absolute domination of the sparkling wine market. The first to be mentioned has to be the ground in which the grapes are grown. The bedrock of limestone, that the monks in Reims many hundreds of years ago carved their cellars out of, is the key to keeping the soils of this cold, inland district warm enough to ensure that the Pinot Noir, Chardonnay and, with less difficulty, Pinot Meunier achieve perfect fruit ripeness whilst retaining the acidity and fruit characters required for the creation of some of the finest sparkling wines on Earth.

Some may ask "American Pinot Noir, what's the big deal?" However, with the Eyrie Vineyard's 'South Block' it is not the finest of American Pinot Noir which is represented as much as New World Pinot Noir in General. The 1975 vintage of this wine (only David Lett's fifth vintage) was awarded tenth place in the much viewed 1979 Wine Olympics, hosted by Gault Millau Magazine in Paris and further prompted Maison Joseph Drouhin from Burgundy to organise a re-match and test the entire range of wines against the 1975 Eyrie. Astonishingly, only the 1959 Drouhin Chambolle-Musigny was to out-shine the Oregonian Pinot and consequently Maison Joseph Drouhin established Domaine Drouhin in Oregon in light of these events. With the media stirred and the wine world shocked it can be said that David Lett prompted us all to address how Pinot Noir is made and where, at its very best, it comes from.
Retrospectively, few have heard of the small Lilydale winery in the Yarra Valley that is Mount Mary. There is no cellar door to speak of and their wines are incredibly rare, however, in this small corner of Victoria hide some of the finest wines in Australia. The late Dr. John Middleton established Mount Mary in 1971 with the aim to emulate the wines of Burgundy and Bordeaux. In my point of view he succeeded and his sons David and Sam continue to strive towards his goal with an even greater pace.

What is Tannat?? Where is Madiran? Why is this all so seamingly unusual??? It is probably true that without Alain Brumont's perserverance the Tannat grape and its appellation of Madiran in Gascony, South West France, would be overlooked in the wine world. The monumental purchase and renovation of Château Montus in the 1980s has shown Brumont to be one of France's greatest ever winemakers as he succeeded in creating what is now one of Southern France's largest premium wine estates from the ground up. His radical idea of creating a world class, ultra premium, wine from the Tannat grape was inevitably realised as his flagship vineyard, 'La Tyre', defiantly shows with a perfect mix of dark savouriness with alluring characters that are quite unlike any other wine on Earth. A truly great wine from a great winemaker.
